Sattu Buttermilk

Preparation Time: 5–7 minutes

Best Served: Cold, especially in summer

Sattu (roasted gram flour) – 2 tbsp

Buttermilk – 2 cups (or curd + water)

Roasted cumin powder – ½ tsp

Black salt – ½ tsp (or to taste)

Salt – a pinch

Ginger – ½ inch (grated or paste)

Green chili – 1 (finely chopped, optional)

Coriander leaves – 1 tbsp (chopped)

Lemon juice – 1 tsp (optional)

In a bowl, mix sattu with a few tablespoons of water to make a smooth paste (prevents lumps).

Add buttermilk to this and mix well.

Stir in roasted cumin powder, black salt, regular salt, ginger, and green chili.

Mix thoroughly until smooth and frothy.

Add coriander leaves and lemon juice if desired.

Serve chilled, optionally over ice.
